  • kg mussels in shells (cleaned)
  • ½ cup butter
  • 6 garlic cloves thinly sliced
  • 1 red chilli finely chopped
  • 1½ cups white wine
  • juice of 1 lemon
  • 2 tbsp parsley finely chopped
  • salt and pepper to taste


Instructions

  1. Prepare the base: Melt the butter in a deep pan with a lid over medium heat.
  2. Sauté garlic and chilli: Add the thinly sliced garlic and finely chopped red chilli to the melted butter and cook for 30 seconds or until fragrant, stirring occasionally to prevent burning.
  3. Add liquids: Pour in the white wine and freshly squeezed lemon juice, bringing the mixture to a gentle simmer.
  4. Cook the mussels: Add the cleaned mussels to the pan, cover with the lid, and cook for 5 minutes or until all the mussels have opened. Discard any mussels that remain closed after cooking.
