Description
A hearty and comforting Vegan Irish Stew made with savory plant-based beefless tips, tender carrots and potatoes, simmered in a flavorful Guinness stout and vegetable broth, thickened with a cornstarch slurry for the perfect consistency.

- 1/4 cup olive oil
- 1 large sweet onion, chopped
- 1 bag Gardein beefless tips
- 3 large garlic cloves, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/2 teaspoon ground black pepper
- 2 cups Guinness stout
- 3 cups vegetable broth
- 3 tablespoons tomato paste
- 1 tablespoon vegan Worcestershire sauce
- 4 carrots, peeled and cut into chunks
- 4 yukon gold potatoes, peeled and cut into chunks
Thickening Slurry
- 1/4 cup cornstarch
- 1/2 cup water
Instructions
- Heat the Oil and Sauté Onions: In a large pot, heat the olive oil over medium heat. Add the chopped sweet onion and sauté for 5 minutes until translucent and fragrant.
- Add Plant-Based Beef and Garlic: Stir in the Gardein beefless tips and cook for 4 minutes, allowing them to brown slightly but not fully cooked. Add minced garlic and sauté for an additional minute.
- Add Herbs and Pepper: Incorporate dried rosemary, thyme, and ground black pepper. Cook for 1 minute, stirring constantly to release the herb aromas.
- Add Liquids: Pour in the Guinness stout and stir to deglaze the pot, scraping up any browned bits. Then add vegetable broth, tomato paste, and vegan Worcestershire sauce; stir thoroughly to combine.
- Add Vegetables and Simmer: Add the peeled and chunked carrots and yukon gold potatoes. Stir well and bring the stew to a boil, then reduce heat to a simmer. Cover the pot and cook for 30 minutes, stirring occasionally until vegetables are tender.
- Thicken the Stew: In a small bowl, mix cornstarch with water to create a slurry. Slowly add this slurry to the stew while stirring to avoid lumps. Cook until desired thickness is reached, using all or part of the slurry as needed.
- Season and Serve: Taste and adjust salt if necessary, depending on the saltiness of your broth. Serve the stew hot, optionally garnished with chopped parsley and crusty bread on the side for dipping.
Notes
- Gardein beefless tips can be substituted with TVP chunks, mushrooms, lentils, beans, or other plant-based beef alternatives using 2-3 cups.
- For an authentic Irish flavor, use Guinness stout. If you cannot consume alcohol, substitute with additional vegetable broth or alcohol-free beer though the taste will differ.
- Leftover stew keeps well refrigerated for up to 4 days and can also be frozen for longer storage.
