Steak
- 2 steaks
- 3 tbsp cowboy butter rub
- Canola oil as needed
- Chopped parsley for garnish
Mac & Cheese
- 4 cups macaroni elbows, cooked
- 1.5 cups sharp cheddar cheese, shredded
- 1.5 cups mozzarella cheese, shredded
- 1.5 cups whole milk
- 1/2 cup bacon bits
- 1/2 cup all purpose flour
- 2.5 tbsp unsalted butter
- 1.5 tbsp cowboy butter rub
- 1 tbsp Dijon mustard
Instructions
- Prepare the Steak: Slather your steak in canola oil and generously season both sides with the cowboy butter rub.
- Grill the Steak: Preheat your grill to high heat (400F). Place the steak on the grill and cook for 3 minutes per side until the internal temperature reaches 120F for medium-rare. Remove from grill and let rest for a few minutes.
- Slice the Steak: Thinly slice the rested steak into bite-sized pieces. Set aside and keep warm.
- Start Mac & Cheese Sauce: Place a skillet on the grill and melt the unsalted butter. Stir in the cowboy butter rub and flour to create a paste, cooking for 1-2 minutes.
- Add Milk and Thicken Sauce: Slowly add 75% of the whole milk in batches to the paste, whisking continuously until the sauce thickens and is smooth.
- Incorporate Flavors: Stir in the Dijon mustard until combined, then add the shredded cheddar and mozzarella cheeses. Continue stirring until fully melted and smooth, then thin the sauce with the remaining milk as needed.
- Combine Pasta and Sauce: In another skillet, combine the cooked macaroni with two-thirds of the cheese sauce. Mix thoroughly.
- Assemble and Top: Top the macaroni mixture with sliced steak pieces, bacon bits, remaining shredded cheese, and remaining cheese sauce for extra creaminess.
- Bake for Crust: Transfer the assembled dish to the oven at 400F and bake for 10 minutes until the top forms a golden crust.
- Garnish and Serve: Remove from oven, garnish with chopped parsley, serve immediately, and enjoy your Steak Mac and Cheese!
Notes
- Use medium-rare steak for the best tenderness and flavor.
- You can substitute cowboy butter rub with your favorite steak seasoning blend.
- For a crispier top, broil the mac and cheese for a minute or two after baking.
- Whole milk is recommended to achieve a rich, creamy sauce, but you can use 2% milk for a lighter version.
- Make sure to let the steak rest after grilling to keep it juicy.
