Instructions

  1. Combine Ingredients: In a medium saucepan over medium heat, combine butter, softened cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice. Stir continuously until all ingredients are well incorporated and the mixture starts to thicken.
  2. Add Chocolate and Crumbs: Add white chocolate chips and graham cracker crumbs to the saucepan. Continue stirring until the white chocolate is completely melted and evenly mixed into the pumpkin mixture.
  3. Color and Thicken: Add orange food coloring in small increments until you achieve the desired pumpkin color. Keep stirring until the mixture thickens further and starts to release from the sides of the pan, indicating readiness.
  4. Chill the Mixture: Transfer the thickened pumpkin mixture to a greased baking sheet. Spread it out evenly using a rubber spatula. Chill in the refrigerator until firm, for at least 2 hours or up to overnight.
  5. Shape Truffles: Once chilled and firm, coat your hands with butter to prevent sticking. Roll the mixture into small balls, about 1-inch in diameter, to form the truffles.
  6. Coat with Sugar: Pour granulated sugar into a shallow bowl. Roll each truffle in the sugar so they are fully coated, adding a sweet, slightly crunchy exterior.
  7. Decorate: Using a toothpick, gently create ridges on the surface of each truffle to mimic the grooves of a pumpkin. Place a chocolate chip on top of each truffle as the pumpkin’s stem.
