Deliciously crunchy and sweet cornflake candy made with corn syrup, sugar, and peanut butter for a quick and easy treat.
Ingredients
Scale
Main Ingredients
- 5 cups corn flakes
- 1 cup corn syrup
- 1 cup granulated sugar
- 1 cup peanut butter smooth or chunky
- 1 teaspoon vanilla (optional)
Instructions
- Prepare Surface: Prepare a baking sheet or other flat surface by lightly spraying with baking spray or covering with parchment paper or non-stick aluminum foil to prevent sticking.
- Measure Ingredients: Measure out the corn flakes and set them aside for easy access during cooking.
- Heat Syrup and Sugar: Combine the corn syrup and granulated sugar in a small saucepan and heat over medium-low heat until the sugar has completely melted, stirring gently.
- Add Peanut Butter and Vanilla: Add the peanut butter and optional vanilla to the saucepan and stir continuously until the peanut butter is fully melted and combined with the syrup mixture.
- Mix in Cornflakes: Turn off the heat but keep the pot on the burner. Quickly add the corn flakes and stir rapidly to coat them evenly before the mixture cools and thickens.
- Form Candies: Lightly coat two spoons or a cookie scoop with baking spray to prevent sticking, then drop spoonfuls onto the prepared baking sheet.
- Cool and Store: Allow the candies to cool completely at room temperature before storing them in an airtight container to maintain freshness.
Notes
- Measure out all ingredients and prepare your flat surface before starting to cook for a smoother process.
- Spray measuring utensils with baking spray before filling to make cleanup easier and prevent sticky messes.
- If the mixture is kept over very low heat or resting on a warm burner, you’ll have a few extra minutes for shaping before it sets.
- Clean the pan by scraping out cooled mixture, soaking in hot water for 1 to 15 minutes, then wash as usual to remove residue.
- If adding sprinkles or jimmies, apply them immediately after dropping each candy piece to ensure they stick well.
- Store candies between sheets of plastic wrap, wax paper, or parchment paper inside an airtight container to prevent sticking.
