Instructions

  1. Prepare Surface: Prepare a baking sheet or other flat surface by lightly spraying with baking spray or covering with parchment paper or non-stick aluminum foil to prevent sticking.
  2. Measure Ingredients: Measure out the corn flakes and set them aside for easy access during cooking.
  3. Heat Syrup and Sugar: Combine the corn syrup and granulated sugar in a small saucepan and heat over medium-low heat until the sugar has completely melted, stirring gently.
  4. Add Peanut Butter and Vanilla: Add the peanut butter and optional vanilla to the saucepan and stir continuously until the peanut butter is fully melted and combined with the syrup mixture.
  5. Mix in Cornflakes: Turn off the heat but keep the pot on the burner. Quickly add the corn flakes and stir rapidly to coat them evenly before the mixture cools and thickens.
  6. Form Candies: Lightly coat two spoons or a cookie scoop with baking spray to prevent sticking, then drop spoonfuls onto the prepared baking sheet.
  7. Cool and Store: Allow the candies to cool completely at room temperature before storing them in an airtight container to maintain freshness.
