Description

These Peanut Butter Pretzel Bites are a delightful sweet and salty treat featuring creamy peanut butter sandwiched between crunchy mini twist pretzels, dipped in dark chocolate, and optionally garnished with sea salt. Perfect for a snack or dessert, they combine creamy, crunchy, and chocolaty flavors with an easy no-bake process including freezing to set.

Ingredients

Scale

Peanut Butter Mixture

  • ½ cup creamy peanut butter
  • 3 tbsp salted butter softened
  • 2 tbsp granulated white sugar
  • ½ tsp salt
  • ¾ cup powdered sugar

Assembly

  • 72 mini twist pretzels

Chocolate Coating

  • ¾ cup dark chocolate chips
  • Sea salt optional garnish

Instructions

  1. Mix Ingredients: Use a stand or hand mixer to beat the creamy peanut butter, salted butter, granulated white sugar, and salt together in a medium sized mixing bowl until fully combined.
  2. Add Powdered Sugar: Gradually beat in the powdered sugar on a low setting until you have a soft dough-like consistency.
  3. Prepare Sheet Pan: Line a large sheet pan that fits in your freezer with parchment paper to prevent sticking and aid cleanup.
  4. Form Sandwiches: Scoop out ½ tablespoon of the peanut butter mixture and roll it into a ball. Use two mini twist pretzels to sandwich the peanut butter ball, gently pressing the pretzels together to form a ½ inch thick sandwich. Repeat to make about 36 sandwiches.
  5. Freeze Sandwiches: Place the formed sandwiches on the prepared sheet pan in a single layer and freeze for 30 minutes to set. You can use the refrigerator if freezer space is tight, but freezing is preferred for best firmness.
  6. Melt Chocolate: Place the dark chocolate chips in a microwave-safe bowl, heat them in 15-second intervals, stirring in between, until fully melted and smooth—this usually takes 2-3 minutes.
  7. Dip Sandwiches in Chocolate: Dip each peanut butter pretzel sandwich halfway into the melted chocolate, then place them back on the parchment paper. Optionally, sprinkle with sea salt while the chocolate is still wet.
  8. Set Chocolate: Return the sheet pan with the dipped bites to the freezer for 15 minutes to allow the chocolate coating to set firmly.
  9. Serve or Store: Serve the bites immediately chilled, or store in the refrigerator in an airtight container until ready to serve.

Notes

  • Store pretzel bites in an airtight container in the refrigerator for 1-2 weeks.
  • They can be frozen for up to three months in a freezer-safe container; serve frozen or thaw in the refrigerator to soften.
  • Use mini twist pretzels for best sandwich shape; pretzel sticks or rods are not recommended.
  • Line sheet pans with parchment paper before starting to prevent sticking and simplify cleanup.
  • If freezer or sheet pan space is limited, use multiple smaller sheet pans to freeze bites in batches.
