Description

This Low Carb Bacon Cheeseburger Casserole is a delicious and hearty dish combining ground beef, crispy bacon, creamy cheese, and tangy pickles for the perfect keto-friendly comfort meal. It’s easy to prepare, uses simple ingredients, and bakes to melty, savory perfection.

Ingredients

Scale

Meat and Seasoning

  • 1/2 pound bacon, roughly chopped
  • 1 1/2 pound ground beef
  • 1 teaspoon seasoning salt
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Vegetables and Aromatics

  • 1/2 onion, chopped
  • 2 garlic cloves, chopped
  • 6 dill pickle chips, sliced

Dairy and Sauces

  • 2 oz cream cheese
  • 2 tablespoons no sugar added ketchup
  • 1 tablespoon Worcestershire sauce
  • 2 eggs
  • 1/2 cup heavy whipping cream
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to have it ready for baking the casserole later.
  2. Cook Bacon: Cook the bacon according to the package instructions until crispy, then roughly chop it and set aside.
  3. Brown Ground Beef: Add the ground beef to a skillet over medium heat. Season with seasoning salt, garlic powder, salt, and pepper. Add chopped onion and garlic. Break up the meat with a spoon and cook until browned all the way through.
  4. Drain and Return Beef: Drain excess grease from the browned meat and return it to the skillet over medium-high heat.
  5. Add Cream Cheese Mixture: Stir in cream cheese, no sugar added ketchup, and Worcestershire sauce until everything is combined and heated through.
  6. Assemble Casserole Base: Remove skillet from heat and spread the beef mixture evenly into a greased 9×13 inch baking dish.
  7. Add Toppings: Sprinkle chopped bacon and sliced pickles evenly over the beef layer.
  8. Mix Egg Mixture: In a medium bowl, whisk together eggs, heavy cream, and 1 cup of shredded cheddar cheese.
  9. Pour Egg Mixture: Pour the egg and cheese mixture evenly over the beef, bacon, and pickles layer.
  10. Add Cheese Topping: Sprinkle the remaining 1 cup of shredded cheddar cheese evenly on top of the casserole.
  11. Bake: Place the casserole in the oven and bake for 20 minutes until the cheese is melted and bubbly.
  12. Cool and Serve: Allow the casserole to cool for about 5 minutes before serving to let it set.

Notes

  • You can substitute pickles with jalapeños or green olives for a different tangy twist.
  • For extra creaminess, add a little sour cream into the egg mixture.
  • Use turkey bacon for a leaner option.
  • If you prefer more veggies, add chopped bell peppers or mushrooms with the onions.
  • Make sure to drain excess grease from the meat to keep it low carb and less greasy.
