Glaze Mixture

  • 1 tbsp lemon juice
  • 1 teaspoon cornstarch
  • 1 tsp vanilla extract


Instructions

  1. Prepare Strawberries: Wash, de-stem, and slice the fresh strawberries in half or quarters. Reserve half of the berries in a mixing bowl to be added later.
  2. Make Strawberry Purée: Place the remaining half of the strawberries into a blender or food processor and blend until fully puréed.
  3. Combine Ingredients: Pour the strawberry purée, cornstarch, lemon juice, and sugar into a saucepan. Mix well to combine all ingredients.
  4. Cook Glaze: Heat the mixture over medium-high heat until it reaches a gentle boil. Then reduce the heat to low-medium and cook until thickened, which usually takes a few minutes. To test, dip a spoon into the jam; if the back remains coated, the glaze is ready.
  5. Add Vanilla: Remove the saucepan from the heat and stir in the vanilla extract until fully combined.
  6. Combine with Fresh Berries: Pour the hot strawberry glaze through a mesh strainer into the bowl with the reserved fresh berries. Stir until the berries are fully coated in the glaze.
  7. Cool and Store: Allow the strawberry glaze to cool to room temperature or chill it before using as a topping for your favorite dishes.
