Description

This Grinder Salad is a delicious and easy-to-make dish combining crisp iceberg lettuce, tangy pepperoncini, savory salami and turkey, and a creamy homemade dressing with Parmesan and oregano for a delightful blend of flavors.

Ingredients

Scale

Dressing

  • 3/4 cup mayonnaise
  • 1 tablespoon red wine vinegar
  • 1 teaspoon minced garlic
  • 1/8 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon red pepper flakes (optional)

Salad

  • 1 head iceberg lettuce, chopped
  • 1/4 cup sliced red onion
  • 1 cup diced tomato
  • 1/2 cup pepperoncini
  • 1/2 cup diced provolone cheese
  • 1/2 cup chopped salami
  • 1/2 cup chopped deli turkey

Instructions

  1. Prepare the dressing: In a medium bowl, combine mayonnaise, red wine vinegar, minced garlic, grated Parmesan cheese, dried oregano, salt, black pepper, and optional red pepper flakes. Stir well until all ingredients are fully incorporated and the dressing is smooth.
  2. Assemble the salad: Add the sliced red onion, pepperoncini, diced tomatoes, diced provolone cheese, chopped salami, and chopped deli turkey into the bowl with the dressing. Stir gently to mix these ingredients evenly with the dressing.
  3. Add lettuce and toss: Top the mixture with the chopped iceberg lettuce. Toss everything together thoroughly to ensure the lettuce and other ingredients are well coated with the dressing, serving immediately for best freshness.

Notes

  • For a lighter dressing, substitute half of the mayonnaise with plain Greek yogurt.
  • If you prefer a spicier salad, increase the red pepper flakes or add a splash of hot sauce to the dressing.
  • Use freshly grated Parmesan cheese for the best flavor and texture.
  • Chill the salad ingredients before preparing for a crisp and refreshing dish.
  • Can be served as a main course or as a hearty side salad.
