Ingredients
Scale
Main Ingredients
- ½ cup Parmesan cheese, finely grated
- 3 tablespoons butter, divided
- 4 cloves fresh garlic, minced
- 2 cups chicken broth
- 1 cup milk
- 8 oz. angel hair pasta
- Fresh parsley, to garnish
Instructions
- Grate Cheese: Grate the Parmesan cheese and set it aside at room temperature to help it melt smoothly into the sauce.
- Melt Butter and Cook Garlic: Melt 2 tablespoons of butter over medium heat in a large skillet, then add the minced garlic and cook for 1-2 minutes, stirring occasionally, until fragrant but not browned.
- Add Liquids: Pour in the chicken broth and slowly add the milk while stirring. Bring the mixture to a boil.
- Add Pasta: Add the angel hair pasta to the boiling liquid. Break the noodles in half if desired for better fit or use tongs to gently tuck the strands into the skillet as they soften.
- Simmer Pasta: Let the pasta simmer for 5 minutes, stirring occasionally to prevent sticking. Then reduce the heat to low.
- Add Butter and Cheese: Stir in 1 tablespoon of butter into the warm pasta, then gradually sprinkle in the Parmesan cheese while stirring continuously until the sauce is smooth and creamy. The sauce will thicken as it stands.
- Garnish and Serve: Sprinkle fresh parsley over the pasta and serve hot, optionally alongside garlic bread with cheese.
Notes
- Make sure the liquid is boiling before adding the pasta to achieve the best sauce consistency.
- You can use milk or half and half; milk results in a slightly less thick sauce.
- Use freshly grated high-quality Parmesan cheese for the best flavor and meltability.
- Turn off the heat before adding cheese to prevent dairy separation and grainy sauce.
- Add cheese gradually while stirring to create a smooth sauce.
- If you only have spaghetti, you can substitute it but cooking time may vary.
