- 4 ounces uncooked pasta

- 1 tablespoon olive oil
- 3 tablespoons butter divided
- 1/2 medium onion chopped
- 8 ounces cremini mushrooms sliced
- 3 cloves garlic minced
- 1/2 teaspoon Dijon mustard
- 1/4 cup chicken broth or vegetable broth or white wine
- 1/2 teaspoon lemon juice + zest of 1/2 lemon
- 1/2 cup freshly grated parmesan cheese
- 2 tablespoons chopped fresh parsley
- Salt & pepper to taste
Instructions
- Cook Pasta: Boil a salted pot of water and cook the pasta al dente according to package directions, usually about 10-12 minutes. Reserve a couple tablespoons of the hot pasta water before draining.
- Sauté Mushrooms and Onions: Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Add the chopped onions and sliced mushrooms. Sauté, stirring occasionally, until the mushrooms release their water and it evaporates, and both mushrooms and onions are well browned and caramelized, about 10 minutes or slightly longer for deeper flavor.
- Add Garlic and Dijon: Stir in the remaining 2 tablespoons of butter, then add the minced garlic and Dijon mustard. Cook for about one minute until fragrant, stirring constantly to avoid burning.
- Deglaze and Flavor: Pour in the chicken broth (or vegetable broth or white wine), lemon juice, and lemon zest. Allow the mixture to bubble and reduce slightly for about one minute, stirring occasionally to combine flavors.
- Combine Pasta and Sauce: Remove the pan from heat and stir in the grated parmesan cheese and chopped parsley. Add a splash of the reserved hot pasta water to loosen the sauce if needed. Toss the cooked pasta into the skillet to coat evenly with the sauce.
- Season and Serve: Taste and season with salt and pepper as desired. Serve immediately for the best flavor and texture.
Notes
- You can stretch this recipe to feed 4 people by increasing the pasta amount and adjusting other ingredients proportionally. Searing mushrooms and onions may take longer when doubling the recipe.
- This dish pairs well with a light green salad or crusty bread to complete the meal.
- If you prefer a vegetarian version, use vegetable broth and ensure the parmesan cheese is suitable for vegetarians.
- Reserve pasta water to help loosen the sauce and give it a silky texture.
