  • 1 1/2 tsp Italian seasoning

Cooking fats and herbs

  • 1 Tbsp olive oil
  • 3 Tbsp unsalted butter, divided
  • 1 1/2 Tbsp minced fresh garlic (4 cloves)
  • 2 Tbsp finely chopped fresh parsley


Instructions

  1. Preheat skillet: Preheat a 12-inch non-stick skillet over medium-high heat to prepare for cooking the chicken.
  2. Prepare chicken: Dab the chicken pieces dry on all sides with paper towels to ensure a good sear.
  3. Coat chicken: Sprinkle the flour, Italian seasoning, salt, and pepper over the chicken. Toss well until all pieces are evenly coated with flour and spices.
  4. Heat fats: Add 1 Tbsp olive oil and 1 Tbsp butter to the skillet. Let the butter melt quickly and tilt the pan to coat the surface evenly.
  5. Cook chicken first side: Add the chicken pieces to the skillet in an even layer with some space between them. Cook without moving until the bottom is golden brown, about 3 minutes.
  6. Cook chicken second side: Flip the chicken pieces and cook for 2 more minutes until nearly cooked through.
  7. Add garlic and parsley: Add the remaining 2 Tbsp butter in small pieces along with the minced garlic and chopped parsley. Cook for an additional 1 minute or until the chicken reaches 165°F in the center and is no longer pink.
  8. Serve: Serve the garlic butter chicken bites immediately while hot for the best flavor.
