Pie Crust

Chocolate Silk Pie Filling

Instructions

  1. Make the Crust: Place the flour, sea salt, and sugar in a food processor fitted with an S blade and pulse to combine. Add the chilled shortening and ice water, and process until the dough resembles a coarse meal that sticks together when pinched. Form the dough into a flat disc, wrap in plastic, and refrigerate for at least 1 hour. After chilling, preheat oven to 450 degrees F. Roll out the dough on a floured surface, place into a 9-inch deep pie plate, pinch edges, and prick with a fork. Add parchment paper and pie weights on top, bake for 12 minutes until it begins to brown, deflate any bubbles, and set aside to cool.
  2. Make the Whipped Topping: In a mixing bowl with a wire whisk attachment, combine 1 ¼ cups heavy whipping cream, powdered sugar, and vanilla extract. Beat starting on low and increasing to high speed for 3 minutes until stiff peaks form. Transfer to another bowl or piping bag and refrigerate.
