Description

These easy apple pie bars combine tender spiced apple filling with a flaky vegan crust and a crunchy oat streusel topping. Perfect for a delicious dessert or snack any time of year.

Apple Pie Filling

  • 8 Granny Smith apples thinly sliced to ¼ inch thick
  • ¼ cup brown sugar
  • 2 teaspoons cinnamon
  • 1 lemon juiced
  • 3 tablespoons cornstarch
  • ½ cup water divided

Crust

  • 2 homemade or store-bought rollout vegan pie crusts
  • Neutral oil to coat the baking dish

Streusel Topping

  • 1 cup old-fashioned rolled oats
  • ½ cup brown sugar packed (light or dark)
  • ¾ cup all-purpose flour
  • ¼ teaspoon cinnamon
  • ½ cup vegan butter diced and chilled


Instructions

  1. Cook the apples: Add the apples, brown sugar, cinnamon, lemon juice, cornstarch, and ¼ cup water into a large pot with a lid. Mix carefully without breaking the apples. Cover and cook over medium-low heat for 5 minutes.
  2. Finish the filling: Add the remaining ¼ cup water, mix well until combined. Cover, reduce heat to low, and cook for 5 more minutes, stirring from the bottom occasionally to avoid sticking. The filling should become creamy. Remove from heat and let cool.
  3. Prepare the baking dish and crust: Lightly oil a 9×13 baking dish and place one pie crust in the dish, trimming the excess dough and setting it aside.
  4. Make the streusel topping: In a medium bowl, combine oats, brown sugar, flour, cinnamon, and vegan butter. Mix with hands until clumps form. Set aside.
  5. Preheat the oven: Set oven to 350 degrees Fahrenheit.
  6. Assemble the bars: Spread the cooled apple filling evenly over the bottom crust. Top with the second pie crust, trim excess dough, and dice leftover dough. Mix diced dough into the streusel mixture and spread evenly over the top crust.
  7. Bake: Bake for 35 minutes or until the topping is golden brown.
  8. Cool and chill: Remove from oven and cool completely. Refrigerate for at least 1 hour or overnight to set the filling for easier slicing.
  9. Serve: Slice into bars and enjoy warm or chilled. Optionally serve with vegan vanilla ice cream.
