Description

This Easy Chicken Stroganoff is a creamy and comforting dish featuring tender chicken pieces cooked with mushrooms and onions in a savory sauce seasoned with dry mustard and Worcestershire sauce, finished with sour cream, and served over egg noodles.

  • 8 oz cremini mushrooms, sliced
  • 1 small yellow onion, chopped
  • 1 teaspoon dry mustard
  • 1 tablespoon Worcestershire sauce
  • 2-3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup sour cream

Instructions

  1. Prepare the chicken: Cut the chicken breasts into 1-inch pieces. Season them liberally with salt and pepper, then coat evenly with the 1/4 cup of all-purpose flour.
  2. Brown the chicken: Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Working in batches if necessary, cook the chicken pieces until lightly browned on both sides, about 3 minutes per side. Remove the chicken to a plate and set aside. Add the remaining tablespoon of oil if browning a second batch.
  3. Sauté mushrooms and onions: Add butter to the skillet, then add the sliced mushrooms and chopped onion. Cook until the mushrooms release their liquid and it evaporates, about 6-8 minutes.
  4. Add seasonings and garlic: Stir in the dry mustard, Worcestershire sauce, and minced garlic. Cook everything together for 1 minute to combine flavors.
  5. Deglaze the pan and simmer: Pour in the chicken broth and scrape up any browned bits from the bottom of the pan with a wooden spoon. Return the browned chicken to the skillet and let everything simmer for a few minutes, stirring occasionally.
  6. Finish with sour cream: Reduce the heat to low and stir in the sour cream. Season with additional salt and pepper to taste. Serve immediately over cooked egg noodles or mashed potatoes. Enjoy!
