Description

A creamy and flavorful slow cooker chicken dish combining tender chicken breasts with a rich garlic Parmesan sauce, sun-dried tomatoes, and aromatic herbs. This easy dump-and-go recipe is perfect for busy weeknights and can be served with rice, pasta, or bread.

Ingredients

Scale

Chicken

  • 4 boneless skinless chicken breasts
  • Salt and pepper, to taste

Sauce

  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes (optional)
  • ½ cup chopped sun-dried tomatoes (in oil, drained)
  • 2 tbsp butter

Garnish

  • Fresh basil or parsley, for garnish

Instructions

  1. Season chicken: Season chicken breasts with salt and pepper on both sides to enhance flavor.
  2. Mix sauce: In a bowl, whisk together chicken broth, heavy cream, grated Parmesan cheese, minced garlic, dried oregano, dried thyme, and red pepper flakes until smooth.
  3. Prepare crockpot: Place the seasoned chicken breasts into the crockpot and pour the prepared sauce evenly over the top.
  4. Add tomatoes: Sprinkle the chopped sun-dried tomatoes over the chicken in the crockpot for added texture and flavor.
  5. Cook chicken: Cover and cook on LOW for 4 hours or HIGH for 2 hours, until the chicken is tender and fully cooked through.
  6. Add butter: During the last 30 minutes of cooking, add the butter to the crockpot and gently stir to combine it with the sauce.
  7. Garnish and serve: Once cooked, garnish with fresh basil or parsley before serving. Pair with rice, pasta, or bread for a complete meal.

Notes

  • Chicken thighs can be used instead of breasts for extra juiciness and richer flavor.
  • Add fresh spinach during the last 15 minutes of cooking for a nutritious vegetable boost.
  • Leftovers keep well refrigerated for up to 3 days or frozen for up to 2 months.
