Ingredients
Scale
Chicken & Coating
- 1.5 lb boneless skinless chicken breasts (or thighs)
- 2 Tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp cayenne pepper (optional for extra heat)
- ¼ cup all-purpose flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
Hot Honey Glaze
- ⅓ cup honey
- 1 Tbsp hot sauce (Frank’s, Sriracha, or similar)
- ¾ tsp red pepper flakes
Finishing Touch
- 7 oz crumbled feta cheese
- 1 Tbsp chopped parsley (optional)
Instructions
- Make the Glaze: In a small heat-safe bowl, combine honey, hot sauce, and red pepper flakes. Warm gently in the microwave or on low heat until smooth and well blended. Set aside for later use.
- Prepare the Chicken: If the chicken breasts are thick, slice them horizontally in half to ensure even cooking. Rub both sides with olive oil, then season with salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper if using.
- Set Up Breading Station: Place flour, beaten eggs, and panko breadcrumbs in separate bowls. This will make coating the chicken easier and more efficient.
- Bread the Chicken: Dredge each piece of chicken in flour, shaking off any excess. Dip into the beaten eggs, then coat evenly with panko breadcrumbs, pressing the crumbs gently to help them adhere well.
- Cook It Crispy: Heat 1 to 2 tablespoons of oil in a skillet over medium-high heat. Cook the chicken in batches without crowding the pan, 4 to 5 minutes per side, until golden brown and the internal temperature reaches 165°F (74°C).
- Transfer and Add Toppings: Move the cooked chicken to a baking sheet or an oven-safe skillet. Sprinkle crumbled feta cheese evenly over the hot chicken pieces. Drizzle each piece with 1 to 2 tablespoons of the hot honey glaze.
- Broil for Melted Feta: Place under the broiler for about 1 minute until the feta softens slightly, creating a creamy topping.
- Serve and Garnish: Finish with chopped parsley if desired. Serve immediately as the hot honey glaze will set quickly. Pair with rice, salad, roasted vegetables, or fries for a complete meal.
Notes
- For extra heat, add more cayenne pepper to the chicken seasoning or increase the red pepper flakes in the glaze.
- If you prefer thighs, they can be used instead of breasts with similar cooking times.
- Use gluten-free flour and breadcrumbs to make this recipe gluten-free.
- Broiling the feta cheese briefly melts it without losing its signature tangy flavor.
- Squeeze excess oil from the cooked chicken with paper towels if a lighter dish is preferred.
