Description

This creamy tortellini with smoked sausage is a hearty and flavorful dish combining tender cheese tortellini with smoky sausage, vibrant bell peppers, and a luscious garlic and herb cheese sauce. Perfect for a comforting weeknight dinner, it features a rich blend of cream, chicken broth, and Parmesan that creates a decadent yet easy-to-make sauce.

Ingredients

Units Scale

Meat and Vegetables

  • 14 oz smoked sausage, sliced
  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced

Seasonings and Liquids

  • 1 tbsp olive oil
  • 1 tbsp veggie seasoning blend
  • 6-7 garlic cloves, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2-1 tsp red pepper flakes, optional
  • Salt and pepper to taste

Cheese and Pasta

  • 5.3 oz Boursin garlic and fine herbs cheese
  • 19 oz frozen cheese tortellini
  • 3 oz shaved or grated Parmesan cheese

Instructions

  1. Brown the sausage: In a large skillet over medium heat, heat olive oil. Add smoked sausage slices and sauté until browned on both sides. Remove the sausage from the pan and set aside to keep warm.
  2. Sauté the vegetables: To the same skillet, add diced onion, green bell pepper, and red bell pepper. Season with the veggie seasoning blend and cook for about 5 minutes until the vegetables have softened.
  3. Add garlic: Stir in minced garlic cloves and cook for an additional minute until fragrant, being careful not to burn the garlic.
  4. Create the sauce base: Pour in the chicken broth and heavy cream. Add the Boursin garlic and fine herbs cheese, stirring until the cheese has fully melted and the sauce is smooth.
  5. Cook the tortellini: Add the frozen cheese tortellini to the skillet. Increase heat and bring the mixture to a boil. Cover the skillet, reduce heat to a simmer, and cook for 8 to 10 minutes until the tortellini is tender but still al dente.
  6. Finish the dish: Uncover the skillet, stir in the shaved or grated Parmesan cheese and red pepper flakes if using. Return the browned smoked sausage to the pan and simmer gently until the sauce thickens slightly. Taste and adjust seasoning with salt and pepper as needed. Serve hot and enjoy.

Notes

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheating: Reheat gently over low heat in a skillet with a splash of broth or cream to loosen the sauce, stirring occasionally. Microwave reheating is possible; stir halfway through for even warming.
  • Tortellini texture: The tortellini will remain al dente when freshly cooked but may soften slightly after refrigeration.
  • Variations: You can substitute smoked sausage with Italian sausage or a plant-based sausage for a different flavor profile.
