  • 8 oz three-cheese tortellini (refrigerated)
  • 4 oz fresh spinach
  • ½ cup heavy cream
  • 4 tablespoons fresh thyme


Instructions

  1. Cook sausage: Heat olive oil in a large, high-sided pot over medium heat. Add crumbled sausage and cook for several minutes, stirring until cooked through. Drain grease from the pot. Sprinkle sausage with Italian seasoning and paprika.
  2. Add vegetables and seasonings: Add peeled and cubed sweet potato, minced garlic, red pepper flakes, and tomato paste to the pot. Stir to combine.
  3. Add water and simmer: Pour in 6 cups of water. Bring to a boil, stirring to dissolve the tomato paste. Once boiling, reduce heat to a simmer (visible boil), cover the pot, and cook for 15 minutes until potatoes are tender.
  4. Cook tortellini: Add tortellini to the soup, cover with the lid, and boil over medium heat for 10 minutes or as directed on the tortellini package.
  5. Add spinach: Stir fresh spinach into the soup until it wilts slightly.
  6. Add cream and season: Remove soup from heat, stir in heavy cream, and season with salt and additional red pepper flakes as needed based on sausage saltiness. Garnish with fresh thyme before serving.

  • Cream may separate or look grainy as the soup cools or is refrigerated; reheating and stirring restores the creamy texture.
