Description

Beef and Vegetables

  • 5 pounds chuck roast
  • 1 tablespoon olive oil
  • 1 package (454 grams) white or cremini mushrooms
  • 1 large yellow onion, chopped

Soup Mixture

  • 1 package (1 ounce) dry onion soup mix
  • 2 cans (10.75 ounces each) cream of mushroom soup
  • 1 1/4 cups water

Instructions

  1. Preheat Oven: Preheat your oven to 400 °F to prepare for roasting the beef.
  2. Brown the Roast: Heat a skillet or Dutch oven over medium heat with olive oil. Brown the chuck roast on all sides until nicely seared, then transfer it to a Dutch oven or lidded roaster.
  3. Add Mushrooms and Onion: Arrange the mushrooms and chopped onion around the chuck roast in the Dutch oven.
  4. Prepare Gravy: Whisk together the dry onion soup mix, cream of mushroom soups, and water until as smooth as possible (a few lumps are acceptable). Pour this mixture evenly over the roast and vegetables.
  5. Initial Bake: Cover with a lid and place in the preheated oven. Cook for 20 minutes at 400 °F.
  6. Lower and Slow Cook: Reduce the oven temperature to 325 °F and continue cooking for 4 to 5 hours until the roast pulls apart easily with a fork.
  7. Make Gravy and Serve: Remove the roast and plate it. Whisk the mushrooms, onions, and pan drippings to make a creamy gravy. Serve the gravy over the beef.
  8. Slow Cooker Option: Alternatively, brown the roast in olive oil using a skillet, place it into a slow cooker, add mushrooms and onions around it, pour the soup mixture over, cover, and cook on low for 8 to 10 hours until tender. Prepare gravy as above.

Notes

  • You can double the gravy ingredients if your pot or slow cooker is large enough; the extra gravy is delicious on its own!
  • Using a Dutch oven or lidded roaster helps keep the moisture in and ensures tender meat.
  • Browning the roast before cooking enhances flavor and texture.
  • If preferred, fresh mushrooms can be substituted for cremini or white mushrooms.
  • For a thicker gravy, reduce the cooking liquid on the stovetop after cooking before serving.
