Description

Chicken and Sauce

  • 3 Tablespoons unsalted butter, softened to room temperature
  • 10.5 ounce can cream of chicken soup
  • 3 cloves garlic, minced
  • 3/4 cup chicken broth
  • 1 (0.7 ounce) packet Good Seasons Dry Italian Salad Dressing Mix

  • 16 ounce box angel hair pasta

Instructions

  1. Sear the chicken: Heat a cast iron skillet over medium-high heat. Add vegetable oil and swirl to coat the pan. Season chicken breasts with salt and pepper. Sear each side for 2-3 minutes until golden brown. Remove from heat.
  2. Prepare the sauce: In a medium bowl, whisk softened cream cheese and butter until smooth. Add cream of chicken soup, minced garlic, chicken broth, and Italian dressing mix. Whisk to combine thoroughly.
  3. Assemble in crock pot: Spray crock pot with non-stick cooking spray. Place seared chicken breasts in bottom. Pour sauce mixture over chicken.
  4. Cook the chicken: Cover crock pot and cook on low for 3-4 hours, or until chicken reaches 165°F internal temperature. Longer cooking makes chicken more tender and may cause it to fall apart.
  5. Cook the pasta: Shortly before serving, prepare angel hair pasta according to package instructions to al dente. Drain well.
  6. Serve: Serve chicken breasts whole or shredded. Either toss pasta directly in the sauce or spoon chicken and sauce over pasta. Optionally, garnish with chopped parsley, cracked pepper, and grated Parmesan cheese.
