- 350 g (12 oz) chicken breast, diced

- 400 ml (1 ½ cups) chicken stock
- 180 g (6.3 oz) cream cheese
- 500 g (1 lb) gnocchi
- 100 g (3.5 oz) baby spinach, roughly shredded
- 30 g (¼ cup) grated Parmesan
- Freshly ground black pepper
- Salt, to taste
Instructions
- Heat and Cook Chicken: Heat the olive oil in a large, deep pan and then melt the butter in it. When the butter has completely melted and is foaming, add the diced chicken breast and cook for 5 minutes over medium heat until golden and cooked through.
- Sauté Garlic: Stir in the minced garlic and continue to cook for another 1 minute until fragrant.
- Deglaze with Wine: Add the dry white wine and cook for 2 minutes until the alcohol mostly evaporates.
- Add Seasonings and Stock: Stir in the Italian seasoning mix and chicken stock. Bring the mixture to a gentle simmer.
- Create Creamy Sauce: When the stock is simmering gently, stir in the cream cheese. Break it down with your spoon and stir continuously until the sauce is smooth and creamy.
- Cook Gnocchi and Spinach: Add the gnocchi and baby spinach to the pan. Cover with a lid and cook for 5 minutes until the gnocchi is tender and the spinach has wilted.
- Finish and Serve: Turn off the heat and stir in the grated Parmesan cheese. Season with freshly ground black pepper and salt to taste. Serve immediately for best flavor and texture.
