Instructions

  1. Heat and Cook Chicken: Heat the olive oil in a large, deep pan and then melt the butter in it. When the butter has completely melted and is foaming, add the diced chicken breast and cook for 5 minutes over medium heat until golden and cooked through.
  2. Sauté Garlic: Stir in the minced garlic and continue to cook for another 1 minute until fragrant.
  3. Deglaze with Wine: Add the dry white wine and cook for 2 minutes until the alcohol mostly evaporates.
  4. Add Seasonings and Stock: Stir in the Italian seasoning mix and chicken stock. Bring the mixture to a gentle simmer.
  5. Create Creamy Sauce: When the stock is simmering gently, stir in the cream cheese. Break it down with your spoon and stir continuously until the sauce is smooth and creamy.
  6. Cook Gnocchi and Spinach: Add the gnocchi and baby spinach to the pan. Cover with a lid and cook for 5 minutes until the gnocchi is tender and the spinach has wilted.
  7. Finish and Serve: Turn off the heat and stir in the grated Parmesan cheese. Season with freshly ground black pepper and salt to taste. Serve immediately for best flavor and texture.
