  • 2 cups chicken broth
  • 2 oz cream cheese
  • 3 green onions, sliced


Instructions

  1. Prepare Cajun Seasoning and Chicken: Combine all Cajun seasoning ingredients in a small bowl. Cut the chicken into 1/2 to 3/4-inch cubes, place in a bowl, and toss with the Cajun seasoning until evenly coated.
  2. Sear the Chicken: Heat olive oil and butter in a large deep skillet over medium-high heat until very hot and butter is melted and foamy. Add the seasoned chicken cubes and cook for about 2 minutes on each side until the outside is browned but chicken is not fully cooked through.
  3. Sauté Onions: Add the diced yellow onion to the skillet with the chicken and sauté for about 2 minutes until the onion begins to soften, stirring occasionally to loosen any browned bits on the bottom.
  4. Add Pasta and Liquids: Stir in uncooked penne pasta, fire roasted diced tomatoes with their juices, and chicken broth until evenly combined. Cover the skillet with a lid and bring the broth to a boil.
  5. Simmer Pasta: Once boiling, reduce heat to medium-low and simmer for 10 minutes, stirring every 2 minutes to prevent sticking, until pasta is tender and the liquid has thickened into a sauce.
  6. Melt Cream Cheese: Add cream cheese in chunks to the skillet and stir until fully melted and incorporated into the sauce to create creamy texture.
  7. Finish and Serve: Sprinkle sliced green onions over the pasta and serve immediately while hot.
