Cinnamon Topping

  • 50 grams (1/4 cup) caster sugar or granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter, melted

Sugar Glaze

  • 30 grams (1/4 cup) icing sugar or powdered sugar, sifted
  • 1-2 tablespoons milk

Instructions

  1. Preheat oven: Preheat your oven to 180 C (350 F) standard or 160 C (320 F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper for easy removal.
  2. Mix dry ingredients: In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and sugar. Stir in the chopped apple pieces briefly to distribute evenly.
  3. Combine wet ingredients: In a separate bowl, whisk together the eggs, vanilla extract, vegetable oil, and Greek yogurt just until the egg yolks break apart.
  4. Mix batter: Pour the wet ingredients into the dry mixture and gently fold with a wooden spoon until just combined. Avoid overmixing to keep the cake tender. Pour the batter into the prepared cake pan.
