- 2 cups cooked mashed potatoes
- 3 large eggs, beaten

Instructions
- Preheat Oven and Prepare Pan. Arrange a rack in the middle of the oven and preheat to 400°F. Lightly grease the cups of a mini-muffin tin with cooking spray or butter to prevent sticking.
- Mix Ingredients. In a large bowl, combine the cooked mashed potatoes, beaten eggs, 3/4 cup of the grated cheese, minced fresh chives, and diced cooked bacon or ham if using. Stir well to mix evenly. Season with kosher salt and freshly ground black pepper to taste, depending on how seasoned your mashed potatoes are.
- Fill Muffin Cups. Spoon the mashed potato mixture evenly into each greased muffin cup, filling them up.
- Top with Cheese. Sprinkle the remaining 1/4 cup grated cheese over the top of each filled muffin cup.
- Bake. Place the muffin tin in the preheated oven and bake until the puffs are set, golden brown on top, and heated through, about 20 minutes.
- Cool and Serve. Let the puffs cool in the pan for about 5 minutes. Carefully loosen each puff with a spoon or knife. Serve immediately with dollops of sour cream if desired.
