Egg Rolls
- 1 pound ground beef
- 1 tablespoon hamburger seasoning
- 1/2 small yellow onion, finely chopped (about 1/4 cup)
- 4 large dill pickles, finely diced (about 1 cup)
- 1 1/2 cups (169.5 g) sharp cheddar cheese, shredded
- 10 egg roll wrappers
- 1 recipe onion bacon jam, prepared
Dipping Sauce
- 1/4 cup (58 g) mayonnaise
- 2 teaspoons mustard
- 2 teaspoons ketchup
Instructions
- Cook the beef mixture: To a medium skillet over medium heat, add ground beef and hamburger seasoning. Cook, stirring occasionally, until no pink remains, about 10 minutes. Remove from heat and drain excess oil.
- Prepare egg roll wrappers: Lay out 10 egg roll wrappers flat on a clean surface for filling.
- Assemble the egg rolls: Working with one wrapper at a time, place near the center: 1 tablespoon bacon jam, ¼ cup hamburger mixture, 1 teaspoon diced onion, 1 ½ tablespoons diced pickle, and 2 tablespoons shredded cheddar cheese.
- Roll the egg rolls: Lightly wet the edges of the wrapper with water. Fold up the bottom corner over the filling and roll once. Fold in the right and left corners to the center, pressing lightly to seal, forming an open envelope shape. Continue rolling until fully wrapped and press edges to seal.
- Preheat the air fryer: Set the air fryer to 400°F and allow it to preheat.
- Air fry the egg rolls: Place the egg rolls in the air fryer basket (in batches if needed), spray tops with nonstick cooking spray, and cook for 4 minutes. Flip, spray again, and cook another 4 minutes or until golden brown and crispy.
- Make the dipping sauce: While egg rolls cook, combine mayonnaise, mustard, and ketchup in a small bowl. Mix until smooth.
- Serve: Serve hot egg rolls with the prepared dipping sauce.
Notes
- To fry in oil: Heat 2–3 inches of vegetable oil to 350°F in a deep pot. Fry 2–3 egg rolls at a time for about 2–3 minutes per side until golden brown. Drain on paper towels.
- To bake in the oven: Preheat oven to 375°F. Place egg rolls on parchment-lined baking sheet, spray or brush tops with oil. Bake 20 minutes, flipping halfway, until golden and crispy.
- Make sure to seal the egg rolls well with water to prevent filling from leaking during cooking.
- Use sharp cheddar for best flavor and meltability inside the egg rolls.
