- 3 large eggs

- 1-2 tablespoons whole milk
Instructions
- Prepare the apples: Peel the apples and slice them into thin strips using a sharp knife or fry cutter. Set aside.
- Make the flour mixture: In a small bowl, combine the all-purpose flour and apple pie spice, then whisk well.
- Whisk eggs: In a separate dish, whisk the eggs until smooth.
- Coat the apple fries: Working in small batches, toss the apple strips into the flour mixture, scoop with a slotted spoon, and shake off excess flour. Dip each apple fry into the whisked eggs, shake off excess egg, then coat again in the flour and spice mixture. Shake off extra flour so the fries crisp well. Place coated fries on a wire rack lined with parchment paper.
- Preheat the air fryer: Set your air fryer to 325ºF and let it preheat.
- Prepare to air fry: Generously spray the bottom of the air fryer basket with cooking spray or oil. Arrange apple fries in the basket without overlapping. Spray the tops of the fries generously with cooking oil.
- Air fry the fries: Cook for 5 minutes. Then turn the apple fries, spray again with oil, and cook for another 5 minutes.
- Finish and sugar coat: Remove fries and place on a cooling rack or basket. While the fries are still hot, immediately sprinkle with cinnamon sugar so it sticks well. Repeat cooking additional batches and toss with cinnamon sugar while warm.
- Make the icing dip: In a small bowl, whisk together confectioners sugar, vanilla extract, and 1 tablespoon of milk. Add more milk 1 tablespoon at a time to reach desired consistency.
- Serve: Serve the apple fries immediately, alongside the vanilla glaze for dipping or drizzling over the fries.
